[Hampshire] A small request for help

I am need to set up an SMTP server on my FC6 Mac Mini System
(For Sean G, its for the sendmail WBI plugin)
I never setup mail on any of my Linux boxes as I use a hosting company
for all my mail. The only time I have ever setup sendmail was during my
RHCE Exam....
So,
1) Which is the best one to use?
2) Any help at the LUG Meeting on Sat would be gratefully received.
