Bluetooth seemed like a good idea, but I'd recommend against it for
two reasons: a) my experience is that Bluetooth keyboards and mice are
considerably less reliable than the equivalent 'regular' RF devices
(though longer range), and b) Bluetooth and WiFi use the same
frequency range and so have a tendency to clash. Other than that, pick
whichever you like; they should all work. Even those stupid 'media
keys' for the most part these days I think.

WiFi: the Ralink and Atheros chipsets have vendor-supported
open-source drivers, and so are probably the best bet. I have an older
Prism2.5-based card which works fine too and I believe the newer Prism
cards also have reasonable support, despite reverse-engineered
drivers.
