May I recommend dirvish? http://www.dirvish.org

It is available via Ubuntu's synaptic (or "sudo apt-get install dirvish"
at the command line) and uses rsync and some perl scripts to automate
the backup of filesystems. Even expiration of older backups are
automated (via cron scripts) so in my case it has been a case of install
and forget.
