install to run those services and administer the box - don't add on a
bunch of unnecessary stuff that sits there effectively idle and waiting
to be exploited.

There's also the physical security of the machine to consider - all of
the excellent suggestions so far are pretty moot if someone can reboot
it with a rescue cd or similar.

Like Isaac said, security is a huge subject.
