In what way are you stuck on it? An icecast/shoutcast client just takes
audio from a source, encodes it (e.g. to MP3) and sends it on its way to
a icecast/shoutcast server. The shoutcast client you are using should be
configurable so you can tell it which source channel you want to use. If
it doesn't, then try a different client. Or file a bug. If you can
record from your microphone you can stream it.

I can't help you as I'm not familiar with that application.

That might be wise. There's really not that much to set up, I was
pleasantly surprised how easy it was when we did it.
