After some more reading I've found the scart pin assignments are fairly
standard and I have a scart adapter with composite video in and out to
reference. So with a pin assignment diagram and this adapter I will be
able to break open an old composite plug and solder the relevant two
outputs from the camera to it. The motion detection is, see above,
signaled along another feed / pin on the scart - so may not be so useful.

I've got all the bits together and have decided to go simple to start with
and use the tools supplied with the xawtv package. Zoneminder looks very
good but more than I need. I may not need to use motion detection
depending on the size of image and the capture frequency for archive
purposes.
