You could edit your sources.list so 'sarge' reads 'etch'. Then run
apt-get update followed by apt-get upgrade, followed probably by
apt-get dist-upgrade if there are any problems. If you normally use
aptitude, use that for the upgrade cycles
This will upgrade every package to the etch version but will need a
decent bandwidth if it isn't to take forever.

If you don't want to risk the upgrade path then using a backport
version of openoffice is the solution
