Your PSU sounds man enough and I think you're right that just about any graphics card will meet your needs.
Assuming your wife is running XP she can Google "power toys for windows xp" and should get a hit at microsoft.com. One of the power toys is called MS Virtual Desktop Manager (MSVDM.) This will give her multiple workspaces with a task bar switch applet, like we enjoy :)
