S-Video and VGA are very different formats. Ignoring the differences in
signalling standards (I'm suprised a VGA to S-Video convertor is available
for just a few quid, are you sure it's not just a connector convertor for
a dual standrad device ?) the big difference you'll see is resolution.
At best S-video gives you:

    NTSC 720x480 @ 60Hz
    PAL  720x576 @ 50Hz


Neither is going to look good for a computer display.


Jamies or freecycle should have plenty of CRT monitors that'll give you
better results.
